As a ninja you can use pyromancies like poison and toxic mist and acid surge because ninja used to creat poison and put it in their sword, bows and arrows, or in the food.
And you can change the blacksteel katana for the man salayer or used some rotten pine resin, and by the way ninjas didn't use katanas, but in these game there are not other kind of orientl sword.
I personally would really like to see the souba (kadaj's sword from ff7: advent children.) its badass, and has two blades for more damage.
As a veteran of dex builds, this series and gaming in general, please listen when I tell you that you're overlooking some really useful skills.
As Roxas pointed out, the Pyromancies work well with a ninja mythos; they were alleged to conjure all five Japanese elements, disappear and even return from the dead. It's perfectly fine to branch out into sorceries and/or miracles from a RP point of view because ninja were warriors, farmers, priests, Wu jen- they didn't officially exist and so came from many different walks of life. However, I'd specialize in either miracles OR sorceries because of the soul investment to reach ability in either.
And dont forget, Pyromancy has no stat requirement. You could be dumb as a bag of hammers and shot fireballs from your arse all day every day.
Another missed component is item use. Sure, it CAN be expensive, but a little bit of pine resin or ooze or what have you can make any encounter easier, and certain others cakewalks. More than once has some poison saved my caboose.
As long as you're trying to be unseen AND you're sinking souls into DEX, why not get a bow and some arrows? Perhaps some throwing knives? Your build lacks a lot of details, but ranged combat is a huge omission, especially considering you have no shield. Pop a poison arrow or three into your target and remain hidden. You win.
All the adaptation points raise several stats, but id say use them for something else, like INT or FTH. That way you can rrly on lighter armours with high resistances and not need many points in endurance at all.
To close, this build is barebones and poorly thought out. A dex build is all about sacrificing armor for damage, and if you are going to play stealthily, you'll need to rely on a good set of tools like resins and missiles, ranged combat, and most of all- and here is the only point on which I agree with the OP- skill with parry, riposte and dodging.
